Preheat 450° F for muffin pan, 425°  for casserole or skillet

Grease a 12-muffin pan or an 8x12 casserole with butter or oil , or very hot (max heat stove top 2 minutes) cast skillet greased with bacon fat.

Blend dry ingredients

Another bowl, blend buttermilk, oil and egg

Add wet to dry, stir till just blended. Add in corn.

Fill muffin cups, pan, or skillet and  bake 20-25 minutes till golden brown.

Let cool 5 minutes, run knife around cup or pan to release.

Variation: Fry bacon strips until crispy. Use the bacon fat instead of the oil, dice the bacon, fold into dough.
