Mortar and pestle the rub, until course grind
Sprinkle rub on a sheet of wax paper, pressing the filets into the spices and completely coated.
Roll up the filets, refrigerate from 1 hour to overnight.
Bring to room temperature.
Preheat oven to 375F.
Cast iron skillet: 2 tbsp. evoo, sear filets (outdoor grill works) until browned.
Put skillet in oven, 15 minutes (130F is rare).
Tent for 10 minutes.
