Pot, water, quartered onion, and garlic, bring to boil.
Add salt and dark meat. Add thyme, oregano and bay leaves, reduce, cover
partially, and simmer 10 minutes.
Add white meat, re boil, simmer, partially covered, 15 minutes till meat is
tender.

Remove from heat, uncover, and let cool in broth. Remove meat and shred.
Strain broth, save ½ cup.
Combine chicken, chopped onion, mint, chopped radish, cilantro, and Serrano.
Add sliced chipotle peppers and sliced radish. Mix in cabbage.
Dress, and serve with tomato wedges and avocado.
