Oven: 350F
Crust:
Whisk sugar, flour, salt. Stir in butter and vanilla until a dough forms. Press
into a pie pan. Use a fork to prick all over.
Put pie weights or dried beans over a piece of parchment paper, bake 15 minutes
until pale golden.
Remove paper and weights, cook another 10 minutes until golden brown. LET
COOL.
Filing:
Oven to 300F.
Whisk labneh, eggs, vanilla, sugar, lemon zest and salt until smooth. Pour into the crust.
Bake 20-25 minutes until just set (like jello) in the center. Let cool.
