Preheat oven to 350 degrees.
In a large mixing bowl, mix the dry ingredients: flour, oats/flakes, salt, soda, and spices. Add nuts, raisins and flour.
Mix the sugars, oil together and whips until creamy. Add the vanilla. Slowly mix in the egg whites. Add this to the dry ingredients, stirring until mixed.
Keeping your hands wet from a bowl of cold water, form small balls of mix, about half the size of a golf ball, placing onto a greased cookie sheet leaving 1 inch between them. Bake at 350’ for 12-14 minutes. Cool on a rack, they WILL get crunchy !
Makes about 5 dozen.
