Bring 3-4 quarts water to a boil. Add the wine, vinegar, coriander, salt, red peppers, thyme, bay leaves, garlic and lemon , reduce and simmer for 15 minutes.

Add lobster, COVER, bring to a boil. Cook 2 minutes. Then steep off the heat for 10 minutes. Put in an ice bath.
