Soak Cod in cold water for 6-8 hours, changing water a few times. Drain. Cover with cold water again, then flake the fish and remove bones. Drain again.

Put cod in pot, cover with cold water, boil for 5 minutes until tender. Drain, set aside.

In a skillet, heat oil, add garlic, then tomatoes and onions, 10 minutes.
Add diced peppers with wine.

Add cod, sauté until fish breaks up, about 10 minutes. Add cloves, peppercorns, marjoram, and thyme; cook for 5 minutes.
Add ½ cup wine.


Add almonds and olives, 2 minutes. Remove from heat.
If using pickled chiles, add them and the juice.
