Cut meat into cubes, salt, pepper.
Sauté over high heat in oil till golden brown. REMOVE.
Add onions, till brown.
Dry roast spices, puree in coffee grinder.
Reduce heat, add garlic, dry spices. 3 minutes.
Return meat to pot, add stock, tomato paste, bay leaves, and ½ cilantro. Bring
to boil, reduce to simmer, 1 hour to 1 hour 15 minutes, skimming fat.
Add potatoes for last 15 minutes. Add ½ cilantro
