Combine EVOO with orange zest.

Boil chicken stock. Add pasta and cook, stirring occasionally, about 10-12 minutes. Drain onto a baking sheet. Spread to a single layer and let cool for 10 minutes.

Cut out the citrus sections, keeping the extra juice. Add onion, mint, basil, fennel seeds, salt and pepper, and the pasta.

Toss with the zested EVOO.
