Preparation

Rinse grain in cold water for 15 minutes.
sauté in pot with 1 tsp EVOO, then add water and lemon juice, and salt.
Simmer, covered, 15 minutes.
Let rest 10 minutes off the heat. Stir with a fork.

Add herbs, salt, pepper, 1 tsp. EVOO,  and zest.

Optional: Add chopped red pepper or seeded cucumber.
