Heat ¼ cup oil, large skillet, add all peppers, 15 minutes. Remove to bowl.
Add turkey to pan, till cooked. Remove to same bowl.
Add last 2 tbsp. oil, add onions, mushrooms and garlic, till tender, 10-15
minutes.
Add wine, to a boil. Whisk chicken stock and Dijon together. Add to skillet,
stir till thick, about 8 minutes.
Add sausage and peppers.
Add scallions, cheese, and parsley
Serve over pasta
