Cover with water, add salt. Boil , then simmer till done. DON’T OVERCOOK.
Total time 30-35 minutes.
Drain, flatten on paper towels. Let COOL.
Line sheet pan with tin foil, then parchment paper.
Oven 450, sprinkle with salt, pour evoo on top, lift up to immerse the bottom as
well .
Bake 30-40 minutes, deep brown.
