Heat ½ cup oil. Sauté onions, garlic pine nuts, currants and pepper for 5 minutes.

Add eggplant, sugar, cinnamon, and cocoa and stir for 5 minutes.
Add thyme, tomato sauce, and vinegar, bring to a boil.

 Lower heat and simmer 5 minutes. Salt and pepper.
