Preheat oven to 450F
Line 2 baking sheets with parchment paper.
Set up 3 pie plates (or lipped plates) in a row.
In the first, mix flour, paprika and 1 tsp salt.
Mix buttermilk and egg and pour into the second plate.
In the 3rd, mix the panko, olive oil and 1 tsp salt
Slice the onion into 1/8" - 1/4" rounds.
Dredge in plate #1, the dip into plate #2, the coat ln plate #3.
Place on sheet pans. Don't let them touch. Nestle the smaller rings inside some
of the larger ones to save space, if you need to.
Bake 10-12 minutes, turn the rings over, bake another 10-12 until golden brown
and crispy.
Serve with chili sauce or honey mustard (mix 50-50 dijon/honey)
