Preparation

3 tbsp. Oil in skillet. Add onions and chopped fennel. 20 minutes, until translucent.
Let cool.

Mix cheese, 2 tbsp. Oil, onions, mint, dill, and ground seed in a large bowl.

Preheat oven to 350º
Oil baking 2 baking sheets.

Assemble Triangles:
Cover Phyllo with a dry towel, and over that a damp towel.

Take one sheet, brush with oil, and place a 2nd sheet on top. Brush it with oil as well.

Cut sheets lengthwise in half, then cut each strip in half lengthwise again to get 4 equal columns.

Put 1 Tbsp. of filing in the lower right-hand corner, about ½ inch from the edge.

Fold up the right corner of the first strip to form a right triangle, and continue folding, as a flag.

Place seam-side down on the sheet.

Spread triangles 2 inches apart and bake in batches, 20 to 25 minutes until golden.

Cool on a wire rack.

About 40 triangles.
