heat the fat in a dutch oven over medium heat on the stove top.
Add the potatoes; salt and pepper. Shake the pot so as not to burn.
Reduce heat to low, COVER, and let cook for 20-25 minutes until
soft but firm, shaking the pot every 5 minutes to prevent burning.
Take off the heat, and let sit for 5 minutes (covered).
Sprinkle with minced herbs.
